Carla Briggs isn’t just a chef — she’s a storyteller, a historian, and a legacy builder, kneading generations of strength, flavor, and resilience into every batch of dough.
Born and raised in New Orleans, Chef Carla bakes with purpose. Her work draws on the enduring power of Black bakers throughout history — women who turned scraps into sustenance, and ovens into opportunity. Inspired by the black women and a long line of unsung kitchen matriarchs, Carla created Viola’s Heritage Breads to honor the stories that never made it into the textbooks, but have always lived in the hands of our mothers, aunties, and grandmothers.
Through her granola, breads, classes, and community experiences, she brings to life what the King Arthur article calls “the rich, under-told legacy of Black baking in America.” She’s reclaiming space — not just on the plate, but in the narrative.
A chef, educator, and advocate for food justice, Carla is committed to sustainable business practices, cultural preservation, and building a bakery that’s as nourishing to the soul as it is to the body. Whether she’s teaching a child to braid challah, leading a historic food tour, or launching her Small Bites, Big Legacy campaign, her work always asks the same question:
